When I was kid, I used to love corn dogs. Every summer here in San Diego we would to the Del Mar fair and one of the things that I just had to have was a corn dog. A corn dog and an Orange Julius and I was good to go. Wandering around the farm exhibits, riding the few rides that the fair offered, tossing pennies onto plates and the shooting galleries were also favorite stops at the Del Mar fair, but the corn dogs are what stick out in my mind.

I taught a children’s cooking class and thought that making corn dogs would be a great thing to show the little ones. Easy to make, easy to clean and almost all kid have had one. What better way to keep a kid’s attention than by showing them something that they like and understand…what a concept that is.

Homemade Corn Dogs

1 cup milk

2 medium eggs

1/4 cup canola oil

1 tablespoons + 2 teaspoons sugar

1 teaspoon salt

2 teaspoons baking powder

1 1/3 cups corn meal

1 cup organic flour

1 pound hot dogs

Flour for dusting

Canola oil for Deep Frying

Popscicle sticks or other type of wood skewer

1.      In a large bowl combine the milk, eggs, oil, sugar and salt.  Mix well. Sprinkle in the baking powder, corn meal and flour.  Mix until a slightly thick batter has formed.

2.      Heat the oil to 375° f.

3.      Flour your dogs, stick them and then dip them into the batter. Once the dog is covered in the coating, drop a couple at a time into the hot oil.

4.      Fry until the outside coating is slightly browned.

5.      Remove from the oil and drain on a paper towel before serving.
