Avocado

Being raised in southern California as I was means one thing, if the weather is warm we are eating guacamole! My father has 3 very large avocado trees in his yard that produce enough of this green gold for not only his guacamole needs, but almost all of mine too. I cannot think of anything better than fresh guacamole and toasty tortilla chips on any given day.

This is an easy guacamole recipe that offers you the option of making it either chunky or creamy (it's up to you!) Since I love spicy foods, this has 2 serrano chiles in it. This is an optional ingredient and should be removed if you are not a big chile fan.

Guacamole

Ingredients:

2t – white onion, chop fine

2 – Chile Serrano, chop fine (opt)

2T – chopped cilantro

Pinch sea (kosher) salt

3 – Avocados, seeded, peeled and diced

2 – Roma tomatoes, chopped

Juice from ½ lime

Garnish

2T – chopped white onion

2T – chopped cilantro

2T – chopped tomato

  1. Place the onion, chile, cilantro and salt into a blender/mortar and blend/pound into a paste.
  2. Rough chop the avocadoes and add them into the mortar.
  3. Mash the avocadoes until your consistency (creamy or chunky) has been reached.
  4. Sprinkle garnish over the top and serve with fresh tortilla chips.
