This grilled pineapple relish is one of my standby BBQ recipes. It is quick n easy to make, it's very tasty and goes with everything from BBQ pork ribs to grilled Thai chicken and those big ol' beef ribs.

Serve this grilled pineapple relish with your favorite BBQ or grilled items (it works on grilled veggies too!) some potato salad and cole slaw and you will certainly impress your guests with your cooking skills and prowess. Now you'll just have to figure out how to get them to leave!

Grilled pineapple relish

Ingredients

½ pineapple, skinned and cored

½ white onion, sliced

1 – Chile Serrano, chopped (opt)

5 – Basil leaves julienne

2 springs mint, chopped

1T – cilantro, chopped

1T – lime juice

1T – Chile vinegar

Pinch salt

Pinch salt

  1. Grill the pineapple, onion & the chile.
  2. Chop ½ of the pineapple and the onion, puree the other ½.
  3. Combine all into a bowl, season, and reserve.
