Peach cobbler is a truly American dessert and mine, with the addition of ginger speaks for itsself. The best way to make a great peach cobbler is to use fresh, ripe organic peaches. If you cannot find organic peaches, or they are too expensive for your budget, don't worry as the conventional ones will do fine. Look for peaches that are soft to the touch, ones that will give a little when picked up and that have a peachy aroma.

This is a pretty straight forward recipe. You can swap some of the ingredients around to make this as unique as it is tasty. Maybe swap out the ginger for some cinnamon nutmeg, perhaps add another fruit such as blueberries or raspberries (they also make a great sauce) or you could just keep it the way it is.

Chef tip : Serving this warm with vanilla bean ice cream is, IMHO the best way to go.

Peach cobbler with ginger

Yield - 6 to 8 servings


6 fresh peaches, blanched, peeled & sliced

1 teaspoon lemon juice
1 teaspoon ground ginger

2 tablespoons brown sugar


For the topping


½ stick softened butter
¼ cup brown sugar
¾ cup oatmeal

½ cup unbleached flour


Whipped cream or vanilla ice cream for the topping


Preheat oven to 400 degrees F.


  1. Mix the peaches with the lemon juice, the ginger and the sugar. Rest for 1 hour, reserving the peach juice.
  2. Combine butter and sugar with a fork (or your hands), then mix the butter and sugar with oatmeal and the flour. The topping should be a bit lumpy.  
  3. Place sliced peaches, and a bit of the peach juice in 6 ounce ramekins or oven safe bowls.
  4. Sprinkle the topping on top of the peaches in each ramekin.
  5. Place ramekins on a small baking sheet and bake 10 to 12 minutes at 400° f. Remove and cool cobbler.
  6. Serve warm cobbler topped with whipped cream or vanilla ice cream.
