A great water cracker recipe has to be one of the best kept secrets in any chef’s arsenal. Easy to make and bake, this is the perfect “on the fly” recipe that you can make when friends stop on by unexpectedly. Toss in some cheese or my Turkey Rillettes recipe and you are minutes away from pulling off a feat of magical proportions. Then again, I suppose you could always run on over to Whole Foods or another trendy health food store and plop down 4 to 6 bucks for these crackers. If you make these they will certainly taste better, and you will save yourself the guilt of tossing that fancy packaging into the landfill for someone to dig up in a couple of hundred years.
The great thing about this recipe is it is so easy to make. When the holidays roll around get the kids together and have then make these for the family get together and they, and you will be thrilled by the outcome. For this recipe I have stuck with some pretty straight forward ingredients. You can and should experiment with different flavor profiles, depending on what you are going to be serving. Think Thai curry paste, Cajun spice and Chimichurri. If you are going to be serving these with something that has a lot of flavor you should then stick with something that is a bit more neutral in flavor.

- 3 cups unbleached flour (organic if you want)
- 3 cups wheat flour (whole wheat if you like)
- 1 teaspoon salt
- 4 tablespoons fleur de sel (or to your taste), reserved
- 1 tablespoon (or to your taste) black pepper
- 2 cup warm water
- 2/3 cup olive oil
- semolina flour (for dusting)
- oven to 425
- Mix the first three ingredients together in a kitchenaid stand mixer.
- Using a dough hook and the mixer on speed 3, add in the water and oil.
- Mix until the dough forms a ball and pulls away from the sides of the bowl. If you need to add more water or flour to achieve this, do so in small amounts.
- Remove the dough and cover with a warm towel at room temperature for 40 minutes.
- Dust a work surface with flour and using a rolling pin or pasta roller, roll the crackers out into long, flatbread like shapes.
- Place the rolled out cracker on a sheetpan dusted with semolina flour. Sprinkle your desired amount of fleur de sel & black pepper on top of the crackers and ever so slightly press the flakes into the dough.
- Prick with a fork or a dough docker.
- Bake until brown and crispy, about 12-15 minutes.
- Remove from the oven, cool and break apart with your hands to serve.
Chef’s note:
Since I just got back from Dubai and have yet to settle down and bust out all of my cooking equipment I made this recipe by hand. Yes, a mano…or green if you want to call it that. A large mixing bowl and a sturdy spoon is all it too to bring this dough together. A wine barrel head was the rolling surface slash cutting board and an empty bottle of 3 crabs fish sauce was the rolling pin. Adds even more of a rustic feel to it, don’t cha think…?
