Nothing, and I do mean nothing gets me more excited for the holiday’s than the food. This means that I am the one cooking around my house, and now that I am back in San Diego I am sure that I will be doing my fair share this year. While living oversees and in NorCal and with no family near I usually worked, making sure that the specials we were serving were great tasting and would offer those unlucky (or lucky) enough to be away from home a bit of the holiday’s while on the road.

That is how this simple cranberry apple stuffing came to be. With an excess of apples left over from the homemade apple pies, I created this easy and tasty twist on an old family favorite.

There are a couple of chef’s tips I can offer up before you go to download the recipe;

  • Use fresh/frozen cranberries. Just be ready from some bleeding of color.
  • Soak the dried cranberries in pomegranate syrup, just adds a bit of a punch to the little guys.
  • Toss in some wild sage or bay leaves for yet another level of flavor.
  • Add you favorite sausage or tempeh for a bit of texture.
  • Add a couple tablespoons of flax meal for the omega-3!

This versatile recipe can and will, I am sure be modified 1000 different ways, but I like the original and simple version the best. Add some poached turkey breast “confit”, toasted garlic haricot verts, mashed potatoes and a good pan gravy and that is about as good as it gets…
