…and so it begins…
If you have been reading my posts as of late you will know that we are opening Dubai’s newest steakhouse @ the Oceana hotel and spa called West 14th, New York Prime. The restaurant opens in the end of June, 2010 and will feature some amazing beef straight outta Texas along with some other surprises (stay tuned for new menu pix in the coming weeks). This post is a quick update on what has passed and what is coming up for us in the coming 2 to 3 weeks, so please read on…
So, we have now, for the most part finished the build out and I am assured that we will take control of the kitchen tomorrow! A chef without a kitchen is like a fish out of water so I cannot begin to tell you how excited I am that this milestone is finally coming to pass, and that I no longer have to truck plates up from the garage! Now the test cooking and equipment testing can begin…

With the bulk of the heavy lifting behind us, it is now time to await the arrival of our staff, which begins this weekend. Once everyone is settled in and we can get down to business, the fun begins. Movenpick is a great company and we are setting out to not only be the first stand alone restaurant concept for the group, but will also be bringing a “American” style of service to the restaurant and to Dubai. A level of service where attention to details and customers is above all else.
We (Brenton, Tim and myself) dry sat the dining room which, basically means you set all tables with “out of the box” silver, glass and plate ware. When staff arrives and the water gets turned on we then break it all back down, give it a good washing and then its back on the tables, awaiting our week long run of soft openings.
All the while I will be refining the menu and working on getting the kitchen staff up and running like a well tuned engine. All this means that the next 4 weeks will be very busy, and a whole lot of fun for us on the trunk of the palm.
